I’m a bit behind on posting my bakes, but I am really excited to share this one I made a couple weeks ago: Vegan Irish Soda Bread! I modified my family’s recipe and am so pleased with the results! My official taste tester (aka my husband) said he wouldn’t have known it was vegan if I didn’t tell him. In addition to taking out the animal products, I also used some dried cranberries and dried apricots instead of raisins, because that’s what I had in the house. Regardless, it is yummy and tastes just like the original recipe. This delicious loaf will be available as a seasonal bake around St. Patrick’s Day.
